Yes, I have kept the truffles in the fridge, but then I would do that with
any chocolate truffle. I suppose I should have put that in the recipe --
refrigerate any leftovers.

On the third day the texture is still very good, and the flavor has
mellowed. They never did taste much like scotch -- Kate, who hates anything
with alcohol in it, loved them -- but they did have a sharpish bite which is
gone now.
