The Mishnah (a 2nd century Codification of Jewish practice) tractate
Shabat, chapter 2 with "With what may we light and what may we not
light..." and goes threw all the rules of it. All sorts of oils are
discussed. However in modern times most people use standard candles, or
sometimes Olive Oil.
