[Sca-cooks] convenience foods: mac & cheese

A replacement for the sour cream and/or cream cheese here would be the Tofutti 
line of products with a dash of lemon juice.  Goat Cheddar cheese melts quite 
nicely.  However you would have an all white dish as the goat cheddar is 
white as well.  Hmmm, think I will go and make some mac and cheese for dinner 
tonight.
