Well, cuz, to tell you the truth- I'm like you- if I'm gonna do garlic, I'm
gonna do GARLIC ;-) But, yes, rubbing the bowl with it provides a bit of
flavor and fragrance, while avoiding the bite that fresh raw garlic has, and
it's the bite that garlic wusses find so difficult to deal with, although
most people find that just a bit of garlic enhances to flavors of the foods.

My usual procedure, when feeding others (and barring allergies) is to wipe
the _wooden_ bowl with the garlic, make and toss the salad in it, then have
a choice of dressings available. Keep in mind, however, that I seldom do
formal service (haven't for at least 20 years) so my methods are designed
for comfortable family/friend dining.
