preface that i don't eat much fish anymore cuz it's too dang expensive
in new mexico, but i recall that haddock is pretty bland as a fish.  so
you want something pretty tame.  and not too dense (like mahi mahi is) 
not pronounced like catfish, and definitely not salmon.

i have been doing a lot with whiting lately.   not too funky, and fairly
inexpensive and available.
