Ah, you missed something in my post.

The buckwheat you purchase as kasha in the US is not just buckwheat. 
I pointed out that it is *roasted* buckwheat.

You can also purchase unroasted buckwheat, although perhaps not at 
the supermarket. I've found it in the bulk section of "health food" 
stores and a rather unusual "supermarket" in my area, the famous 
Berkeley Bowl.
