THOROUGHLY pat dry the turley, inside and out with paper towels, just before dropping SLOWLY into the oil. 

I've seen turkeys carry a fair amount of water in the cavity after thawing that you SWORE you had all dried out... 

A 1/4 cup full of water in a couple gallons of 375 degree oil can _definitely_ ruin your day. 
IIRC, next to over filling the pot, water in the bird is also a major cause of boilover fires.

Not very pretty and very preventable.

(As for myself, my Inlaws have insisted that "I take a rest" form the usual spread I lay out, and are taking us out to a good restaurant.
"Seems a shame to go through all that work just for us..." 

I cant seem to convince them that cooking is not work, it is therapy.
I LOVE brining and cooking the bird, doing honey tarragon carrots, savory pumpkin soup, roast asparagus in bearnaise, making three kinds of pie, biscuits, mulled cider, etc - not to mention the soup and other leftovers...

Oh well, I will just have to make up for it at Christmas.
