Since the salmon was mostly whole (i.e.: minus
the head and guts), I believe they cleaned the
fish first and then filleted and deboned.  I
really didn't show them how to do it, as they
said they knew how.  I left them to do their
job, because as head chef I had so many other
things to do.
If there is a better way, please do tell me, so
I can instruct whoever does this the next time
I cook a banquet and have fish.
