[Sca-cooks] Honey Oatmeal Bread

This is not a period recipe but it is very good. The measurements are by
weight so you will need a kitchen scale.

Honey Oatmeal Bread

1 1/4 cups milk
2 tablespoons oil
2 tablespoons honey
3 ounces regular rolled oats
12 ounces bread flour
1/2 tablespoon kosher salt
1/2 tablespoon active dry yeast

Either make the dough by hand using your usual method, letting it rise
twice, or make it in a bread machine using the Dough setting. It makes a
very soft dough.

When the dough has finished rising, turn the dough out onto a lightly
floured board and form it into a loaf. Place it in a buttered 9 x 5 x 3-inch
bread pan, cover it with a damp cloth, and let it rise until doubled in
bulk, about 1 hour at 72º.

Preheat the oven to 375º.

When the loaf has finished rising, slash the top once lengthwise. Bake at
375º for 28 to 30 minutes. Remove the loaf from the pan and cool on a rack.
