The modern orange carrot is also sweeter than the medieval varieties 
that it was grown from. We have discussed this here previously. I 
believe also that some folks have back breed the modern carrot to try 
to create these older varieties. I don't know if they are as sweet. 
Perhaps using the medieval variety would also be another way to solve 
this problem. You would probably have to grow your own though.
