In Celebration of the Hofstra Museum Exhibition
Playing, Learning, Working in Amsterdam’s Golden Age
Hofstra University, Hempstead, NY ... Hofstra University will host a
17th century Dutch dinner to be served on Friday, October 1, at 6:30
p.m. at the Hofstra University Club. The Dutch Dinner, organized by food
historian, Ms. Peter G. Rose, an internationally recognized expert on
Dutch and Dutch-American culinary practices, is open to the general
public and Hofstra community. Dinner costs are $35 per person.
Reservation for the dinner must be made in advance through Hofstra
University’s Office of Field Services at (516) 463-5750.
The menu is based on authentic 17th century Dutch recipes. It will
feature a mushroom appetizer; a main course with chicken prepared with a
spicy fruit sauce accompanied with Savoy cabbage and a green salad
garnished with calendula flowers; and dessert of apple custard, a ginger
cake, quince preserve, and a raspberry brandy. “The Dutch had a sweet
tooth in the 17th century and imported spices from all over the globe
through the Dutch East India Company,” Rose said.
