Milk has probably been used in cooking since the beginning of animal husbandry.  The type of milk would depend on what kind of herds were prevalent in that place and time.

"And he took curd, and milk, and the calf which he had dressed, and set it before them; and he stood by them under the tree, and they did eat."  (Genesis 18:8 -- Abraham offering hospitality to the three angels.)
