[Sca-cooks] Canton ginger?

the pear tree is telling me to start looking at that 
ginger pear preserve recipe in my Settlement Cookbook.

it calls for 'canton ginger'.  i have used fresh ginger 
and dry ginger.  but i was wondering exactly what 'canton 
ginger' is.

i have a thought that, the cookbook being old, it was one 
of ye olde charming ways of identifying fresh ginger with 
exotic chinese roots (so to speak).  or not.

the recipe calls for sugar, pears, lemon peel and the 
aforementioned ginger, so it's not too exotic or complex.

any ideas?
