Don't waste those tomatoes...when I lived in the midrealm, I grew wonderful 
tomatoes and ran into the same problem - a kind wonderful lady gave me this 
recommendation - blanch them, peel and freeze...I did so in quart zip locs 
and had tomatoes - granted they were cooked - but had them at my disposal 
when I wanted them.
Also, store your flowers in an air tight container out of the light after 
you have dried them for future use :)
