Lay out bread slices - whatever we have in the house.  Put in the  cheese - 
preferred is sharp cheddar with sliced onions, something I learned when  on 
school exchange in England.  If I don't have the cheddar, I usually use  
provolone and will then add mayo and horseradish, or a slice of tomato, or  sometimes 
a slice of ham.  Close sandwich.  Butter the outside of one  slice and place 
in warmed frying pan or on warmed griddle, butter side  down.  Butter the 
outside of the top slice while it's in the pan and then  put a lid on if in frying 
pan or leave it alone if on griddle.  Wait until  the bottom is nicely browned 
(this is the hardest part for me, I peek too  often), then flip.
I like them with tomato soup, too.
