we've strained it for more than one use over the holiday 
season.  otherwise, wait until it is cool (and hopefully 
viscuous enough) to pour into a double garbage bag, 
ideally with old newspaper in it, tie tight and put in 
outside trash can.  at least, that has worked for us.

however, being an  exceedingly frugal person, tossing that 
much oil makes me wince.  but there's nothing else to be 
done that i have found.
