A terrific way to cook lamb - cut up a couple cloves of garlic and
sliver, and insert here and there on leg-o-lamb or or nice sized chunk. (Alt,
you can rub meat with the garlic.) Put on a spit, and butter the meat all over
with nice brown mustard. Now pat on brown sugar. Start the meat rotissering for
about 10 min, to set the coating, and then begin basting with a mixture of
white wine, strong coffee, and a little garlic powder. Cook to rare and serve
with boiled-down basting liquid (you might have to add more coffee and wine as
you go - bast about every 10 min.)
This recipe stolen from Elsie Masterton's Blueberry Hill Cookbooks
(forget which one). For more exact measurements, email me - the book is buried
somewhere in the cookbooks case...
She recommends serving with steamed buckwheat kasha, btw
