And I've seen good cooks quit cooking or trying because people have told 
them 'period food sucks' or 'we don't want period food, we want edible 
food'. 

When people give you a hard time, it's always problematic.
But it's important for us to understand that sometimes it's hard to talk 
about authenticity and documentability without disturbing someone's 
equilibrium.

I camp in a nylon tent.  Once in a while the Anti-Authenticity Security
Squad have claimed that this means I can't be concerned about the
documentabilty of food or of herbal preparations. On one notable
occasion, one remark (a response that no, a mahogany table was NOT
cheaper, lighter OR more period than a plastic one) got me in trouble
with both sides-- some people called me Anti-Authenticity and others 
called me Authenticity Police for pointing out that mahogany is a South 
American wood.

Hm.. Do you happen to remember where the original recipe comes from? 
See, here I am doing it again, but I don't think I'm likely to get the 
book, so I may be able to find the original recipe and make a version of 
it for 
myself!
