I hate cilantro. But, I guess you are correct in that it
is the amount. A little bit can add depth but too often
a little bit isn't added.

But speaking of people acting on trends, there was an
interesting little bit on Iron Chef, America last night.
Mario Battali had made a dish with seared scallops. One
of the judges, the cantankerous one to replace Kishi,
questioned Mario on whether he felt seared scallops
were over as a trend. Mario replied that he isn't
dictated by trends, just what is right for the food.

Brava.
