Nice looking pie,
 Coffyns were/are free standing raised  pies would be a better descriptor.
 The crust of which we are not sure of , it  may or may not have been eaten. 
I suspect not by those who they were served to at least.
 Medievil version of a roasting bag in realy  broad terms yes it could be. 
Some what more like a non metal roaster would be better though.
