Actually...
 The best bialy these days that arent from Houston
Street ( the bakery closed ) are from Wegman's
supermarket. ( sorry, anyone not in NY NJ east PA )

 They use high gluten flour, par boil the onions
before toasting, and they get a good dimple in there.

 I have saved a lot of miles on the car since moving
near a Wegmans =)
