my mother's family landed there and they were hungarian
immigrants. the goulash i grew up with was cubed beef,
onion, water, salt, pepper, paprika (lotsa), and either a
dumpling or an egg noodle. a fried of mine of polish
descent, come to US in the last 20 yrs, tells me goulash
is basically the word for 'whatcha got leftover' or
'mishmash'.
