I tend to use 4 ounces of meat per person, but usually use two or three 
meats in a feast.

Prior to 16th Century feast -- no potatoes.  16th Century -- sweet potatoes, 
4 ounces per.  White potatoes are reserved for ver-r-r-y late German (which 
I may never do).

I don't use deli meats and seldom use cheese.

How much meat per person should be allocated (in the case of a beef roast).
