I'm just not familiar enough with the problems with wine vinegar that 
you speak of. I've tried lots of different wine vinegars (well, you make 
a lot of sauces, make a lot of mustard, and you use a lot of vinegar) 
and haven't seen a problem with it.

If I were making homemade vinegar, though, I would definitely want to 
invest in some vinegar mother-- I wouldn't want to take a chance on the 
wine going off in a different way than going to vinegar (lots of period 
evidence for different ways wines can go off...)
