I am so not an improvisational cook, but I looked at the ingredients
and thought 'Salad'. So:
Cook the lentils with a little salt. Not too much, 'cause bacon is salty
Saute the bacon. Drain and reserve fat.
Blanch and sliver the almonds
Heat bacon fat. Add a little ginger and some bitter orange juice. Heat
again.
Pour over spinach, and toss.
Pile lentils on platter, top with spinach. Crumble bacon over it, and
garnish with slivered almonds.
