Probably too late now, but for next time: Cut into 1 inch thick slices.
Smear lightly with Dijon mustard, pat with sage, bake at 375 degrees with 2
teaspoons of melted butter drizzled over it and 1/4 cup of apple juice or
white wine.  Should take about 20 minutes to cook thru.

Pour pan juices into a sauce pan, add another teaspoon of butter and a
teaspoon of flour and cook until thickened - slightly darker than a blonde
roux.

Pour thickened sauce over pork slices and serve.

Also very nice done with a tenderloin.
