Depends. How about variations on cabbage or kraut? Traditional winter veggies, 
and at least in Germany, red cabbage, green cabbage and pickled cabbage 
varieties are traditional Christmas fare with the goose.

Spaetzle? OK, it's very German, but for Christmas it's really either noodle 
varieties or potato dishes hereabouts.
