when i was growing up (50's and onward), i never had gravy 
outside of a restaurant.  we just used the skimmed pan 
juice.  sometime my father would moosh a bit of stuffing 
in it, but it never really thickened it.

i have since become a rather good gravy maker. 
 fortunately. 8)
