Another work that came to mind after I signed off
last evening was:

Regional Cuisines of Medieval Europe. A Book of Essays. 
Edited by Melitta Weiss Adamson. New York: Routledge, 2002. 
It features chapters on medieval  Northern Italy, Southern Italy, Spain, Southern France,
etc. Each chapter offers a very good Bibliography.
