Good point. In some of our earlier discussions about period ovens, it  
was brought out that since medieval ovens were thermal mass ovens,  
you might heat the oven up and then bake a series of items, each  
needing a lower temperature than the previous type of item, in the  
oven as the oven cooled down.

Bread would probably be one of the first items baked, unless you did  
something like pizza ahead of it, and then you might do various baked  
dishes. So in this case, the bread would have cooled at least a bit  
before it was served.
