I may have some modern Provencale recipes in my teaching stuff.. so I'll look and check.
 
I have no idea what the time period is for Herbes de Provence, but they're lovely. (here's a few ideas for using them)
 
Lady Tegan of Northen Outpost used them to flavor an oilve iol for dipping, and it came out just wonderful.
This same oil makes a great dressing for salds, mixed with a touch of vinegar or not.
Last year at Pennsic, I grilled chicken with herbes de provence and it was great.
