[Sca-cooks] Candied Orange Peel

my recipe, albeit not period, suggests parboiling quarters 
of orange skin to remove the bitter and make it flexible, 
scooping out any pith possible, then cutting into the 
strips to simmer in the sugar water.

this process seems like it would be tailor made for 
cutting out shapes.  haven't tried it but the strips tend 
to work well
