I've been using one for years....we really love it, especially for doing 
up food for Pennsic.  It seems to me that we've put as many as four 
chicken breasts in a single bag with no problem.  I suspect that the 
difficulty they are dealing with  is the fact that the machine is 
pulling all of the air out of the package before sealing it.  I guess 
that it may be more difficult that pull all of the air out if there are 
multiple layers.  So I'd not put a whole lot of layers in.

You might try online to find the bags.  We have found them at BJ's, a 
discount place.  But they may well be available for less at, say, e-Bay.
