Nah, bread machines aren't a scribal error, I just don't use them. I bake
four or more loaves at a time and bread machines aren't up to industrial
strength baking. They also don't give you the feedback you get from feeling
the dough. I may use a KitchenAid or a Hobart to mix and knead, but I still
work the dough a little by hand to feel the texture. Fire and forget baking
doesn't often produce the quality of product you can get from real live
baker.
