The mullet is filleted. You peel the flesh from the skin, picking out the
bones. You then add the flaked fish to cream cheese, grated celery, grated
onion and garlic, plus a little Old Bay. A food processor works very well
for this. I serve the spread with Ritz or Sociables crackers.
