In Artemisia, at least at the MAJOR events, we generally have feast 
reservations due a week or so ahead.  There are generally folks who show 
unplanned the day of the feast, and there are generally folks who pre-pay 
and then are not able to attend.  Every attempt is made to match those who 
show at the last minute and those who may have pre-paid feast reservations 
so that the one may purchase the reservation from the other.  It usually 
works out pretty well.

Note that I said 'generally'
