Real cream cheese, ie: cheese made from cream, is period. Philadelphia
Cream Cheese is a modern concoction.

fresh-cheeses-msg (52K) 12/29/08 Fresh cheeses such as cream cheese
and cottage cheese. Non-aged cheeses.

I do wonder about substituting Greek plain yogurt for cream cheese
since I thought yogurt underwent different processes or (fermenting?)
than cream cheese. But I can get Greek plain yogurt in my grocery, so
I'm wondering if it might make a good or more authentic substitute
than Philadelphia Cream Cheese for cream or fresh cheese.
