My beloved wonderful husband of all awesomeness has made this two or three times now, and each time it has turned out better than I ever would have expected. I can only eat very thin slices but man is it good. 

If you cook it long and slow it isn't greasy in the slightest. Some weird alchemy happens in there, I don't know. 

He calls it "death by pig".
