I likes 'em nekkid, myself, but as my wife is very sensitive to chiles and also allergic to citrus, we've also become big fans of mignonette sauce, which is just [good quality] vinegar, to which much coarse ground black pepper and finely-chopped shallot has been added and given time to infuse.
