It's "verjuice", also spelled verjus, verius, etc.  It's made from 
unripe grapes or other unripe fruit.  It's used a lot because it adds a 
lovely acidic taste.  It's not lemon juice; it's not vinegar.  It's 
verjuice and is available for purchase on the Internet.  You'll 
undoubtedly receive many more responses, because I get the digest and am 
always behind!
