I agree-- and you certainly wouldn't guess that many meals included 
plain boiled or stemed vegetables, or mixed "garden" salads-- since many 
cookbooks assume that you know how to prepare those things.

Scappi has *lots* of menus that say things like 'five kinds of raw 
salads and five kinds of cooked salads' without indicating specifics.
