Oxford University Press has republished the 1898 edition of 'THe Complete Indian Housekeeper and Cook' which gives you a fair idea of the culinary realities of the Anglo-Indian housewife towards the end of the 19th century. A couple years ago, there also was something out called 'The Memsahib's Cookbook', but I never got hold of a copy.
I'm pretty sure there is more and better material, I just don't know where, though. Some of the oreiginal cookbooks out of copyright may be webbed somewhere.
