[Sca-cooks] Fritters (was: An almost final Feast Menu)

Just gotten back from eight days at an interstate event and I missed the
discussion on the feast menu. But I did want to make a comment about
fritters. I very frequently include fritters of some kind in my feasts. I
usually swear afterwards 'never again' and then do it anyway, because they
are yummy! The 'never again' is because standing in front of a frying pan
for a couple of hours is hot, unpleasant work. But I've never shied away
from it on the grounds that the results are unpleasant. 

You can cook enough small fritters for 100 people in a couple of hours, and
they don't become soggy or cold enough to become yucky in that time. You do
have to time things so that you cook them pretty much right before they are
due to be served. Large electric frying pans are particularly useful in this
regard, especially if you have a kitchen with a small amount of stove space.


You can also pick and choose your fritter recipes. I was surprised that
there was any issue with the herb fritter recipe as in my experience these
are more like small pancakes and the crispy/soggy issue is not really an
issue at all.
