Starting out and one would have to check these references carefully,  
balsamic vinegar appears in the book  Why Italians Love to Talk About  
Food  By Elena Kostioukovitch.

Look at page 127 which is up on Google books or can be seen on Amazon.  
Besides the monk Donizone, they mention a reference in 1518.
