[Sca-cooks] Red Deer

Greetings!  While looking for something totally different, I came across 
a recipe called "To make red deere" in "The Second Part of the Good 
Hus-wives Jewell" by Thomas Dawson, 1597.  It appears to be a "mock 
venison" recipe for making pseudo-red deer when none is available.  The 
recipe says:

"Take a legge of beef, and cut out all the sinewes clean, then take a 
roling pin and all to beate it, then perboile it, and when you have so 
doon lard it very thick, then lay it in wine or Vineger for two or three 
howers, or a whole night, then take it out & season it with peper, salt 
cloves and mace, then put it into your past, & so bake it."
