Could it be the immature flower bud? Those look like eyes to me.

The Huici and the Perry translations of the 13th C Anon Al-Andalus has me
stumped again. In the recipe called
"Eggplant Dish Known as the Arabic," they call for "eyes of rue" or "ojos de
ruda." What is that?
