Like others have said, you have to decide for yourself the direction 
you want to learn.  Many of us try to be as authentic as we can, and 
are more than willing to help, if that's your desire.  But there 
still will be things to learn, no matter which way you go.
These days there are very many original period cookbooks available 
online.  It's probably easier to find them online than in print. 
This is a site that has links to some of the available original 
cookbooks, which I've found useful.
