Well, I couldn't get the link to work, so I don't know exactly what all they did with the archaeological material, but the phrase "recipes based on archaeological soil samples" sets off all sorts of alarms for me. I've done a fair amount of work with soil samples, and generally what you get when you're working with material that's that old is carbonised seeds and/or pollen (in terms of plant matter). Those will tell you what plants growing in the area, but not how, or even *if*, the plants were used. the same holds true for any bones you might find: without butchery marks, knowing that there was a given type of animal at the site tells you nothing about how it was utilised. For the Viking-era stuff, theres at least traveler's narratives and literary descriptions  (both of which, admittedly, have their own source-critical issues)  to give some idea of how foods might have been used, but for the really early stuff, it's all makey-uppey.
