[Sca-cooks] Broken brawn recipe?

One little snag with the plans for my feast. I don't remember all
about the recipe for broken brawn/braun brise, and it looks like there
might not be anyone around here in current possession of a copy of An
Ordinance of Pottage. Could someone please share the part about the
leche of brawn with chunks of brawn in it? It's from the recipe that's
about three different kinds of leche of brawn under one combined
title.
