I think my previous email was wrong. But I note:

"Pour le levain mestre a este mis 10 liv. de leave

...
pour rasfraichir le paston, 3 liv 2 onces

Pour prestir, tant le pain blanc que le bolent, oultre les dix livres 
dessus declarees de leave su paston, 13 liv 2 ounces

Note that the first two weights add up to the third, which seems an 
unlikely coincidence. Jim interprets  the three pounds two ounces as 
water being added to the dough and the thirteen pounds two ounces as 
something else.

I gather "levain" is leavening. What's the distinction between that and 
"leave?"
